Seriously Jen?
I totally just combined two recipes in one. You're probably sitting there thinking, "why would I put cumin in a stir fry dish?" You wouldn't. Sleep deprivation rears it's ugly head. Please do NOT sprinkle with cumin...instead sprinkle with GINGER and a drizzle of soy sauce. Oy.

Tummy Tuck Thursday
Do you guys remember that time that I had six kids and then all the sudden I didn't feel like doing anything anymore? Yeah, me too.
One of the MANY things I don't feel like doing anymore is cooking. I love to cook...and eat, but that's another blog topic entirely, but I have absolutely zero desire to cook these days. None. Nada. Zilch. Zip.
With my lack of cooking zeal running rampant, we have really been focusing on short, quick, easy meals. This particular one has become one of our go-tos.
It is super delicious, super easy and pretty healthy to boot! Enjoy!
Terriaki Chicken Stir Fry
Take a few chicken breasts (I use frozen) and stick them in your crock pot
Pour about half a bottle of your favorite terriaki sauce over the chicken (I use the Kikoman brand original terriaki sauce---it has sesame seeds in it, quite yummy)
**Make sure you use sauce NOT marinade!
Cover and cook your chicken on low for 6 hrs.
Make some brown rice
Chop up your veggies of choice--we use whatever we have on hand, usually bell pepper, onion, broccoli, green beans, carrots, peas...the sky is the limit
Stick all your veggies in a bowl, drizzle some olive oil and sprinkle with a teaspoon or two of cumin, toss to coat
Saute your veggies over medium-high heat for a few minutes until crisp-tender
Put your rice in a bowl, top with veggies and some chicken
That's it. I told you it was easy and have I ever led you astray? Of course not.

A Premature Tummy Tuck Thursday just for Chris
Does everyone know about my relationship with Chris? How we kind of tease each other to the ends of the Earth and back? Well...okay, usually he's doing the teasing and I am trying to come up with clever come backs and that usually doesn't work out in my favor. Yeah.
So Chris was talking to me today about not cooking healthy food (I'm a Virginian, cut me some slack). I pointed out that, if he ever bothered to read the family blog he would find lots of HEALTHY recipes that I make and post. He then pointed out that I haven't done that since November. Well crap.
So yeah, I have not been good about updating the blog. In my defense, I have had a FEW tiny things going on...fine, it's just that I'm lazy but whatever. Families are forever, forgive, love one another...
So this post? This is a Tummy Tuck Thursday Special Edition in honor of Chris Ramsey. If he doesn't comment, then I win this game. IF he reads it and proves he has read it by actually commenting...well, we'll cross that unlikely bridge when we get to it.
Tummy Tuck Thursday Recipe: Easy Coconut Ice Cream
Did ya'll know that I like sweets? I know, I know...you had NO idea! But I do. I really do. Ice cream is one of my favorites. Now that I live in the seventh circle of he...er...central Florida, I love ice cream even more. It's crazy hot and humid here guys and I am huge right now...small planet sized.
So anyway, there is actually a way to enjoy "ice cream" treats without the cream...don't freak out yet. I swear it's still me. No it really is...I mean, I get that's what an alien would say if it abducted my body but it really is me. I can prove it. Well, not really but what alien would honestly want to abduct a 9 month pregnant body living in central Florida? Please!
So this is the best thing about this frozen treat...it's so easy and so cheap and did I mention it's really easy?
All you need is coconut milk and strawberries. Yeah, that's really it. Oh, you can use a different fruit. Bananas, mangos...knock yourself out.
So here goes...
Take 1 can of full fat coconut milk, open it and leave it uncovered in the fridge over night
Scoop off the thickened part the next day and plop it in your blender
add 2-5 strawberries (mago chunks, bananas, etc.) if you want it extra cold, freeze those fruit chunks first
throw in a splash of vanilla and a pinch of salt
IF you want, you can add sweetener but it's not necessary
blend it all up...that's it.
If you must have chocolate...and sometimes we must...throw in a little scoop of cocoa powder.
So there ya go...ice cream in January. I get that you guys are probably all up to your eye balls in snow and frozen-ness of all sorts but you can channel some Floridian heat and enjoy some healthy ice cream. You're welcome.

Prayers for Dad
Hey everyone! Please keep Dad in your prayers today as he is expecting the last of the biopsy results to come in. The preliminary ones have been benign. Let's pray that the rest follow suit! Lots of love and prayers headed to Utah today!
